Paella by Alberto Herraiz

Paella is our go to dish. We make it for friends, to celebrate, and for comfort. The recipe we use is a carefully backwards engineered version from various Paella's we've sampled over the years, and for our purposes we think that we've pretty much nailed it. However, we could always try a new recipe, or a perhaps a lesser known regional variety, and thankfully Phaidon has published a beautiful Paella cookbook that will allow to accomplish just that. We think 108 recipes should be enough...enough for us to try a new recipe every other night and blog about over the course of a year and then write and sell the screen play...unless something like that has been done already.
